GREENOCK SCONES.
Required Half a. pound of flour, two tabie-speon-fuls oi oaslor sugar one and a.-hali leaspoonfuls ol b'kinj; powder, quarter of a tea-si-oouful of aibouate of soda, aalt, axidcarbo-
nate of soda, a pinch of salt, loz of lard 1 , loz of butter, buttermilk or sour milk. Mix together the flour, sugar, baking 1 powder, aalt, aad carbonate o f soda. Then rub iv lightly the lard aud butter. Alls the whole to a soft paste with buttermilk or sour m:lk. [ As quickly as possible roll the mixture out to a quarter of an inch thick, ..hen stamp ;fc out in rounds the size of a wineglass. Put them on a greased baking tin, and bake in a q-uick oven about 10 minutes. Before serv- ' mg them split them in two, put a lump of 1 butter between each piece, and place the ' scenes in the- ovea till hot through. They ar» . very good eaten cold.
