SPANISH BEEFSTEAK
Requned : lib of steak (this should be about 2m thick), half a teacupful of hot water, Jib of Miiona peeled and thinly sliced, Jib of tomatoes, pepper, salt, and a dust of grated nutmeg. Put the steak into a baking dish with the water: put it into tb» oven, and bake for half an hour, basting frequently. Then tak<s it nrt, sprinkle with, pepper, salt, and grated nutmeg, and cover it with tha thinly-sliced onions, and bake for another 15 minutes. Put the tomatoes into a. steiwpan with a very Utt'e water, and stew them gently until tender; then put them m a layer on the top of the steak and onions. Return the di*h ta the ov«n, and bake for another 20 minutes. Serve very hct with the gravy lound.
