OAMARU ABATTOIRS.
A representative of this paper has just paid a most interesting visit to tho Gamaru Abattoirs. These abattoirs have, eince their opening about a year ago, been under the capable supervision of Mr T. Cunningham, and, thanks to his scrupulous attention, are a striking object lesson in cleanliness and sanitation, combined with, economy in working and the most improved and up-to-date methods generally. An abattoir under competent management and municipal supervision in the neighbourhood , of a city or provincial town is a guarantee . that the necessary Bcientifio safeguards are * being taken in respect to the handling of meat for consumption, and the residents of Oamaru m-ay pride themselves that they are in this particular so well provided for During the last six months 782 cattle and 5411 sheep and 3anibs have passed through, the abattoirs, and it must be eminently satisfactory to local residents to know thafcof this large output absolutely nothing of a doubtful naiture has been allowed to pass ' j into the market. At the abattoirs there j is an aibu.nda.nt supply of fresh water, with j 1 which the concrete floors are constantly J ; scoured; and the buildings, situated close j to the sea, possess excellent facilities for the disposal of all drainage and offal. Everything about the premises is kept in perfect order and scrupulously clean. Altogether our rep-resenta-five was greatly impressed by his visit to thesuj. abattoirs, and j speaks m high terms of Mr Cunningham's • ( eooiTfresy in allowing Mm to inspect them i and in explaining tlie various stages and j processes of the woric.
