CARAMEL CUSTARD
Boil 6oz oi brown sugar and one gill of water together until it is. dark brown. Warm a* mculd, butter it, and coat it over with the caramel by pouring in syrup and turning .• round and round til) \he caramel sets. Add 1£ pi 'it of milk, the yolks and whites of five eggs well beaten and mixed with the milk, and sugar to taste (all strained), pour into the mould, cover, and steam gently for one hour, not letting j the water bubble. When quite cold turn out carefully.
