FRIED CAULIFLOWER,
Pick off the outside leaves, and cut the stalks close to the bottom of the flower; wash, and lay in cold water half an hour; unless very large do not divide the stalks, put in boiling water, slightly salted, and cook until tender, and 'then drain ; divide .equally into small tufts, and spread* on a dish to cool. Prepare a sufficient quantity of batter, made in the proportion of a tablespoonful of flour and two tablespoonfuls of milk to each egg; dip each tuit- of cauliflower in this batter, and fry a light brown.
