VANILLA FRITTERS. Place 3oz of self-raising flour in a clean bowl ; add to it an ounce ot macaroon ciunib&, a pincli of salt, the yolk of an egg, and a dessertspoonful oi oiled butter ; mix thoroughly, and then add by degrees threequarters of a, teacupful of hike- warm water ; beat to a smooth cream, then add the whites of two eggs whisked to a firm froth, and half a teaspoonful of vanilla. Have ready a saucepan half full of boiling fat ; drop the batter by spoonfuls into this, and fry till ot a light golden brown. Take out quckly, drain carefully on clean kitchen paper, and serve piled high on a d'oyley. Diist liberally with sugar before serving. The above battei will also serve excellently for apple, orange, or banana fritters ; but in cither ot these cases omit the vanilla. LIVER AMD BACON. Cut the liver inti slices, and dip them into flour. Fry the baoon slowly in a fryingpan. Eornove it, and fry the liver in the bacon tat. Place the liver aud bacon in a very hot dish. Dredge about hall &n ounce of flour on the pan, fry it brown, pour half a pint oi boiling water or stock on it, stir, and boil for a mmute or two; add ..alt ctnd pepper; pour round the liver. A TASTY GINGER PUDDING. Mix together tl' 3 flour, ijb finely chopped iuei, ?.lb moist sggar, aud ?,oz ground ginger. Butter a mould, and piit the mixture into it dry. Tie over it a floTUtiii cloth, and steam for three hours, which car be done by placing it in a, saucepan and keeping the water below the rim ox ths mould. Serve with sweet sauce.

Put one-ha'f of the mixti^e on a fits v >tm, colour the icmamder with cochineal, anci ackl to the first ha'f viliile hot. SALLY LUXNS. One pound flour, loz butler, two eggs, thi-ce teaspooiifulb baking powder, and one tcacupful of waimeJ milk. Mix the b.ikmjf powder with the flour, then odd the ejgs v. el beaten; warm the milk and dissolve the butter in it, add Lo the other ingredients, anci mix all together to a uther si ft dough; cut it inLo four pieces, make into the shape of feuns, flatten with the hands, and put them into a good oven at once and bake for about 20 minutes. When removed from the oven, brush over with a little egg and milk. CLEAR SOUP. To clear a quirt of giavy soup beat the white and shell of an egg ii> a cupful oi cold water. When the soup is boiling, tluow in the egg. draw the saucepan to the side of the fire, aud simmer for 10 minutes ; then strain the whole tlnough a tammy and it will be quite CURRIED SHEEP'S HEAD. Wash the head. Slice and fry an onion and an apple in loz of dripping; add a tablespoonful of curry powder, a pint of s=tock, mid sah to taste. Cut the meat off the head and simmer m the stock for three houis; then thicken the stock with loz flour. Serve with the tongue and brains as a garnish ; the brains to be toaked in cold water, boiled separately, and then added to the curry. Send boiled lice to table with this dish. FUN PADDING-. Cut some apples veiy thin, and place in a dish three-parts full, sprinkle some sugar o-<-er them, and put on a layer ot apucot jam: then take a gaucepon with two tablespoorauls of corn flour, a little sugar, and a pint of milk; stir it o^e^• the fire till it thickens. Pour it over the apples, and bake in a model ate oven xiU v mcc brown.
