THE BUTTER QUESTION.
TO THE EDITOR.
Sir, — In your last week's issue thero is a letter signed " Blueskin," in which there i 3 an Irish stew made of a letter signed " J, W.," and some that I wrote. I would not have troubled you with this, but I do not want another to be.ir my sins, and "J. W." has plenty of his own, as any man will who goes " mollycoddling" around the dairy, and learning the women folk how to do their work. When I see a mau making butter, and a woman between the handles of the plough, I then say they ought to exchange clothes for outward appearance' sake.
As to " J. W.s " recipe, I should not like to use much of the butter so prepared ; and as to his feed theory, I know that good butter can be made from cows fed amongst the tussocks. I do not know whether " J. W." is a storekeeper or not, but " Blueskin " thinks so ; and as to the little bit of hair, he is wrong, for it was a big bit, and as I haye t neither horse nor collar, consequently that bit of hair was imported direct from Dunedin. It might not have come from Blueskin ; but I would rather buy butter made b^ daylight than candlelight, say 3 or 4 o'clock in the summer morning, and it would save the candles. lam sorry I cannot visit the next Blueskin butter show, as I like to make the acquaintance of good butter-makers, as they are a very worthy class, but scarce. As to the other letter in the same issue, on the same subject, tho only bit of information is in the signature, and that, any body would have known after reading the letter, if he had never signed it. Abuse of "J. W." gives us no information.
I intend this to be my last on this subject. I did not think, when I started it, it would have given you so much trouble ; but perhapa some good may come out of it, and in saying goodbye to tie butter-makers, I wish that at the same time I could say good-bye to the dirty butter. S, MC.
