Sib, —As the above abattoirs are to be open on Monday, perhaps a few words from a master butcher will not be out of place. Mr Snowball will have a difficult duty to perform, because it will be almost impossible for him to inspect every head -of aKeop and cattle when being killed—indeed it would take 10 inspectors to properly do the work if killing is to go on in every stall. I would suggest that any slaughterman killiug be made aware that it is part of his duty to inform the inspector of any likely diseane when he is killing ; failing to do this to be ordered off the premises. There is another point, and a very important) oae, Mr Snowball will have to attend to. There have been bought from Burnside yard" dnring the last few months a. number of old crocks of cows bought for 10s a head, and old calls of sheep for Is a head. These ha?e been purchased by one of our present slaughtermen, no doubt for boiling down purposas, but I knew the tongues, tripes, and in some cases the carcasea, have found their way into & butcher's shop for human food.
