Marrow Soup.—Well wipe the marrow and cut tip into - quarters; remove the seeds and put it unpceled into a steamer. When soft remove the peel and pilt the marrow,into a bowl. Mash it up, adding a quart of white stock and and net. Italian Kidney Pudding. Boil some macaroni till it is tender, and put a layer of it in a pudding basin with some sliced boiled kidney. .. Season it slightly, and then cover it with a layer of tomatoes and breadcrumbs. Continue these layers till the basin is full, and then pour over all some good gravy. Cover it with a layer of breadcrumbs and steam it for two hours. Calves' Feet Fricasseed.—Soak them three hours, simmer them in equal proportions of milk and water until they are sufficiently tender to remove the meat from the bones; cut-in good size pieces. Dip them in yolk of egg, cover with fine breadcrumbs; pepper and salt them, fry a beautiful brown, and serve in-, white.'sauce. Fried Rabbit. —Fried rabbit is a pleasant change from the ordinary way of .cooking it. Wash the rabbit and dry in a cloth. Cut into neat pieces, chopping off any superfluous bone ; and stew gently in a savoury gravy till almost cooked. When cold wipe dry, dip each piece into beaten egg and then in breadcrumbs, and fry in deep fat. Serve with slice of lemon and chopped parsley. A Good-Luncheon- Cake.—Rub four ounces of butter and lard into half a pound of ground rice, a quarter of a pound of sultanas, throe 'ounces of sugar, and two tablespoonfuls of bak-ing-powder.
