Received June 22, at 0.45. a.m: Sydney, June 21. Addressing the dairy factory managers, Mr O'Callaghan, the State dairy criticised the butter standard recommended by the recent Pure "Food Conference, and considered if the Federal Government adopted • the standard for 'sale or export, butter containing less than 84 per cent, of butter fat or more than 14 per cent, of water, and more than 3 per cent, of boric acid, would be dealt with as adulterated. The average New South "Wales butter only contained 83 per cent, of fat and 13.5 of water. •
