HOME - SEPARATION
GROWING IN POPULARITY. Home-separation of milk has not got such a hold in the Dominion that it would take a lot of killing should an attempt be made to do so (says the "Lyttelton Timos”)- We do not hear so much nowadays from the authorities concerning tho evil effects of homeseparation. Probably they see that in spite of all' objections the system is becoming almost universal, and is not doing as much damage to the butter trado as was at one time anticipated. No doubt the system of co-operative creameries in local centres was better as regards keeping up the quality of the butter, but it is safe to eay that many who now go in for a little dairying could not think of doing so if they • had to cart their milk to the creamery daily. Separating on .the farm is less costly and decreases the hours of labour. The calves and pigs get tho benefit of good, warm skim milk. Tho initial outlay is greater than, when delivery to- a creamery is carried out, but that outlay is soon, repaid on tho labour saved, and wear and tear on horseflesh, horseshoes, harness and trap. It behoves those who go, in for home-separation to seo that the work is carried out as scientifically and as cleanly as possible, and that tho cream is delivered in good condition as frequently as can be managed, Tho fact that home-wseparated cream is being eagerly soiight after by some of the leading factories in New Zealand, and that good butter is still being turned out by these factories, proves that home-separa-tion can be successfully conducted. I notice that the prices of butter oro hardening in London, and that the New Zealand product is well up in value to the Danish. May that ,siato of affairs ever continue, end may those who are careless in their cowshed and dairy be made to suffer by a reduction in tho prices paid to them for their butterfat.
