EDUCATING THE PEOPLE An endeavour to educate people to u proper regard for the food they catis being made by Miss Betty W ilmot, who is one of the Commonwealth dietitians working in Canberra at the institute of Anatomy. I\liss ilmot was appointed to the institute in March, 19:59, after five years as dietitian to the Victorian Railways. She is a graduate of Melbourne University in science, and holds that university's diploma for dietetics. She has always been interested in tho public health aspect of nutrition, and at the institute has prepared the material for a series of educational pamphlets which have been published free of charge for the communitv. Tho institute is launching its campaign for wider knowledge of the purposes and composition of iood by means of these pamphlets, which explain very simply the uses of food, fruit and vegetables, and also discuss vitamins. Miss Wilmot, who designed the pamphlets, has arranged for them to bo extremely useful to the housewife in planning her needs. She has set forth food values and tho needs of diet in terms of food, and it requires no scientific knowledge to understand them. They provide the whole background of tho physiology of nutrition, explain how and what food does, and what foods are required for bodily health. Miss Wilmot states that ft balanced diet is based on milk, eggs, cheese, meat or fish, potato and other vegetables, fruits and butter, foods known as protective foods, and ;s supplemented with energy food such a3 bread and cereals, preferably wholo grain products. Variety in selection of moats, fruits and vegetables is important, she states, both to ensuro a. good supply of essentials and to avoid monotony.
