QUESTIONS AND ANSWERS BY FKMINA "P.T." (To Awamutu) would bo grateful for a recipe for Worcestershire sauce. Marking Ink Stains "Blue Bell" (Auckland) would like to know if there is any way of taking out marking ink .stains. The inquirer has not stated what materials aro stained. Insect Nuisance "Safe" writes: —Never paper shelves ! on which food is kept, as it attracts germs, flies and dust. Scrub wooden shelves and give them two coatings of good paint. When dry add a coat of enamel. Each day wring a cloth out in vinegar and water and wipe the shelves. Certain disinfectants attract flies by their odour. Recipe for Jam This recipe for melon jam was sent in by "M.H." For every lib. of melon allow Jib. sugar, ground ginger, juice and rind of a lemon, and one apple. Peel melon and cut in dice. Thinly slice the lemons and apples and place in a pan with £he ginger and sugar. Boil steadily and gently for about 5 hours, stirring all tbe time. Bottle when cold. When the jam becomes thick and transparent it should be boiled enough. Slow, steady boiling until it shows nice and clear is best. Soused Herrings "M.H." writes: —L r or each 211). of fish cleaned and dressed take 12 peppercorns, 6 cloves, 1 small onion, .'i gills vinegar, J teaspoon spice, J teaspoon salt, pinch of cayenne and a small bunch'of herbs. Lay tho prepared fish in an enamelled or earthenware baking dish and cover with tho vinegar, the chopped onion and the other ingredients. Cover dish with buttered paper and bake in a moderate oven for 20 minutes. Lemon Pie Line tho bottom niul sides of a pio dish with puff pastry. Beat to a cream the yolks of three eggs with a cup of milk and a cup of sugar. Stir in the outer grated rind of 2 lemons nnd their juice. Then mix in 1J cups breadcrumbs or cake crumbs and pour into the paste-lined dish. Bako till set in a moderate oven. The pastry is less likely to be soggy if it is first baked in the dish and the mixture poured in afterward and the whole balked. When set beat the whites of three eggs stiff and spread on top of pudding. Upturn to oven for a few minutes until very lightly browned. Tar Stains on a Carpet Damp a cloth with a mixture of equal parts of methylated spirits and benzine and, first wetting the rug well with tho mixture round the rim of the stain, rub tho marks with tho damped cloth gently until clean. Another way is to rub tho stains well with some butter or lard. Leave for about 6 hours and then first damp around the rim of tho marks with turpentine, after which the marks should bo rubbed with some of the turpentine on a cloth until as clean as possible. Remove what remains by sponging with ammonia. Finally sponge with some clean warm water.
