SHIPMENTS TO ENGLAND CHILLING NOT NECESSARY > Canada is experimenting with a • scheme for supplying the English j market with fresh beef. Shipments of 25 carcases a week are being made and will continue for 12 months in an effort '! to detect and remedy any flaws which 1 may be revealed in the system. It the experiment proves successful, I the Dominion hopes to build up an j extensive trade in fresh beef for the English principle involved is that all beef requires to hang for some days following slaughter if it is to be tender, juicy and digestible. This period is being employed by the Canadians to ship their beef carcases to England, where they can be placed on the market as soon after slaughter as can the home-killed supply. The present demand for this beef exceeds the supply at prices above that for . Argentine chilled, and only slightly below Scotch killed beef. 1
Canadian beef-raisers hope, in a year or two, to be able to supplv England with 200,000 carcases annually by this method. The carcases are being shipped at a temperature of 30.5 degrees Fahrenheit.
