Save gas and improve the flavour of "potatoes. They can be baked in half the time if they are allowed to lie in well-salted water for 15 minutes before Butter can be creamed quickly if the bowl is scalded before putting the butter in. If vegetables are boiled too rapidly they will be tough. Before boiling potatoes, cut thorn lengthwise instead of across, and they will take less time to cook. The pudding will take nearly an hour less to cook than if the basin were lined in the usual way.
