NON-TOP SANDWICHES.

A new and interesting addition to the afternoon tea is a supply of non-top sandwiches. To make these, choose bread that is rather stale, and cut in slices a little thicker than usual for sandwiches. Make a filling of meat paste, cheese, fruit or shell fish, and spread generously on the top o'i each slice. Cut into triangles or squares, and decorate with an appropriate garnish, such as rings of radish, chopped almonds, cherries, or chopped hard-boiled egg. Coat the top of each with a layer of aspic jelly or clear gelatine. Arrange carefully with sprigs of watercress between and a few radish roses round the plate.
