PULLED RABBIT.

One rabbit, 10/,. butter, one onion, six peppercorns, half pint stock, io/.. flour, grated lemon peel, mashed potatoes, chopped parsley; wash the rabbit. Take out- the rabbit and pull tho flesh into flakes. Crop the liver and add. Season with salt, pepper, and parsley. Melt, the butter in a saucepan, stir in the lour, add half a pint of the liquor in which the rabbit was cooked, stir till it boils, and add the rabbit mixture. Simmer gently for ten minutes. Make a border of mashed potatoes on a hot dish and arrange the rabbit mixture in the centre.
