BACON, TOMATO AND SAUSAGE.
Half a lb. of sausages, three streaky rashers, three tomatoes, half an egg, breadcrumbs, dripping, seasoning. Skin the sausages and divide tho whole into six portions. Shape these into round cakes with flattened tops. Brush them with egg and coat them with breadcrumbs and fry them gently in the dripping until brown. Meanwhile halve the tomatoes crosswise, sprinkle them with ealt and pepper, and bake them lightly, being careful to prevent them breaking. Place half a tomato on each round of sausage and top it with a roll of bacon. To prepare the bacon rolls remove the rind, halve the rashers crosswise, and roll up each piece. Stick them on a skewer and cook them.in the oven or under the grill until the fat is semi-transparent. (Allow two for each person.)
