SODA BISCUITS.

Soda biscuits are easy to digest, and they are made very quickly, in about 20 minutes. Place one pound of flour in a basin, rub m a quarter of a pound of fresh butter, add half a pound of castor sugar, and mix thoroughly. Beat two eggs, stir them into the other ingredients, and beat the mixture well. Stir m quickly one small toaspoonful of carbonato of soda. Roll on a floured board to about half an inch thick, then cut, into shapes as desired, and bake in a hot oven for about 15 minutes. The most important point to remember when making soda biscuits is that the mixture must bo rolled and cut into shapes very quickly after tho soda has been added and put into tho oven immediately, or the biscuits will bo heavy.
