TO CURE HAMS FOR HOME USE
(By Request.)
For a ham of 131b. to 151b.. allow 2oz. saltpetre, loz black pepper, J,lb. common salt, lib. bay salt. Lay the ham in this powdered mixture for four days, turning and rubbing it well with the ingredients every day. Then let it lie in ]Alb. treacle for a month, turning and rubbing every day. Then soak in water for 24 liours, drain, and hang up to dry.
