To every 91b. fruit allow 51b. sugar, the juica and grated rind of three lemons, and |lb. of whole ginger. Cut up the fi'uitr-—if ripe, don't peel it, but if at all green, peel thinly; put the sugar over it, and let it stand over night; then add grated rind and lemon juice and ginger (tied'in a muslin bag); boil slowly for two hours, then briskly for half an hour, stirring for the last half-hour all the time.
