INFLUENCE ON PAY-OUT. RESEARCH CHEMIST'S REPORT. [I)Y TELECRAPII.—PRESS ASSOCIATION. ] RAWER A, Saturday. An extensive report on cheese factory yields by Mr. P. O. Vcale, research chemist in charge of the local dairy laboratory, has been published. The report, which is considered to bo of considerable importance to the industry, examines tho reasons why tho yields of some factories arc consistently shown as higher than the great majority here and in other parts of tho Dominion.

The second section of the report deals at, length with factors influencing tho falso or theoretical calculation of yield, and shows how satisfactory or even high yields may bo evolved without any true improvement in factory management and without any actual benefit to the supplier. In this section the influence of test is very thoroughly considered. The process of part skimming i;s also shown to have a bearing on this aspect of the question.

After summarising real and artificial factors which have an influence on yield tho report concludes with a paragraph devoted to the effect of the yield on the pay-out of tiie factory, showing, among other things, that although a supplier to a high-yield factory may receive a higher price per lb. butter-fat, it is possible that through a reading down of (he test he may receive no more in the aggregate than {.lie supplier of a similar quantity of milk to a lower paying factory. The final measure of the prosperity of a cheese factory supplier, the report contends, is tho return he secures per acre.
