CHERRIES PRESERVED IN BRANDY.
A DELIGHTFUL DELICACY. Another popular recipe for cherries is to preserve them in brandy. Sound morellos give tho best results. Take off most of the stalks, prick the cherries with a needle, and drop them into a widemouthed jar or bottle. Sprinkle over them three-quarters of their weight of white sugar and fill the jar with brandy. Cork and seal, tying tho cork down with a bladder cover. In twelvo months' time they will prove a great delicacy.
