Kir, —May I stress the necessity of finding a different method of payment to the cheese supplier than on a batter-fat basis. Just recently it was brought to my notice that a cheese supplier was separating a portion of his milk to feed the calves and putting the' separated cream back into the remaining milk. Consequently his test is exceptionally high and he is paid cheese prices for solids which undoubtedly he is not supplying. This is grossly unfair to the supplier, who is taking all his milk, and also to the manager, as it is spoiling his chances of making a good final payment. With the condemning of whey as a suitable food for calves and pigs this practice may. if not checked, lead to the ruination of the cheese industry. Cheddar.
