Baked Puree of Onion.—l Soanish onion, 1 yolk of egg, 2 or 3 teaspoonfuls of cream.' Boil a Spanish onion, putting it into boiling salted water. When soft (in about hours —do not choose too large an onion), rub it through a sieve, add salt and pepper, the yolk of an egg, and the 2 or 3 tablespoonfuls of cream. One yolk of egg will set 1 gill of onion and cream. A tablespoonful of grated cheese can be added if liked. Turn into a tiny greased pie-dish and bake slowly till set, standing the pie-dish in a tin of water for about 15 minutes.

Poached Egg in Milk.—Poach in milk, allowing the egg to remain in tho saucepan 4 or 5 minutes off the fire. The toast should bo moistened with some of the milk, and what milk is left over must be kept and used for the next meal, to make a white sauce or a white soup. No lemon or vinegar must be put into the milk.

York Toast.—Two tablespooniuls cooked ham, |oz. grated cheese. Toast. Chop tho ham finely,. Stir o% r er the fire till quite hot, then pile it on to a piecr of toast cut into a neat square. Cover the whole with grated cheese, and put under the grill till the cheese has melted and has a little brown tip.

Toffee with Castor granulated sugar, 2oz. golden syrup, loz. or 2oz. castor oil (as desired), 1 teaspoonful lemon juice, 1 dessertspoonful water, salad oil. Melt all over slow fire, stirring. Then boil quickly till a little dropped in cold water is brittle and snaps easily. Pour into a well-oiled tin (use salad oil). When half cold, mark into squares with the back of a knife, and when cold, break where marked. (Good for children.)
