Strawberry Shortcake.—|lb. flour, 6oas. sugar, Jib. butter, half-teaspoonful baking powder, 2 eggs and a little milk, lib. strawberries, 2 or 3ozs. sugar, boiled custard or whipped cream. Beat butter, and sugar to a cream, add the eggs (well beaten). SieVe flour and baking powder, fold into.other ingredients, adding about halfteacupful milk. Bake in two shallow sandwich tine, 15 to 20 minutes; cool, and butter underneath. Cleanse strawberries, mash with a fork, 'adding sugar to taste;.place between the buttered sides of the cake, cover the top with strawberries, «md serve with custard or cream.

Strawberry Whips.— packet strawberry jelly, iripe strawberries, (custard or cream. Make jelly in the ordinary way, put an tablespoonful in tall custard glasses, allow to set slightly. Put in a few strawberries, and a little more jelly; leave till well set. Fill up with custard or whipped cream. Serve with ice wafers or sponge fingers.
