THE BUTTER QUESTION.

TO THE EDITOR. Sir,—l lmvo only just come aorosß tlio letter of your correspondent "R. 0." I don't much like taking any notice of anonymous scribblers, but still I do not fool inclined to bo sal upon by such cowards, bo I would cravo a few lines in reply. Ho invites mo to cnnio and see him. I thank him kindly, hut if lie had appended his name to his letter, I might have known who to look up. Ido consider I lmvo some knowledge of butler-making, and the trnflico ilono in it, and havo done so since tho year 1851 in this colony. "R. 0." Rives mo food for the mind in speaking of tho loss ho makes on our butler. We are well awaro that somo of Auckland grocers ticket up our butter at what they consider a loss. But what is tho object of that 1 Why, it is a draw to catch purchasers for their cither commodities. Wo lire not so shallow as not to see through that dodge of the trade, and I expect "K.C." is one of that class. He talks of taking butter out of brine and selling at a loss of 2d tier lb. 1 should liko to know if ho put ' it in brine with that view. If so, ho must I lie a good business man indeed. There lmvo ! been and always will bo reckless traders who J are bound to "go to tho wall," an'd thero : are men in the trade now who have stuck to it for a long time, and I don't expert they would do so if there was nothing in it, as " K.C." would lead us to believe. Thero is a talk about grading butter. I think it is pretty well graded when there aro tlireo prices ii'iioli'd for it. When I speak of butter I allude to what is of good quality, foi I consider li"l butter dear at any price. Now, .Mr. "K.C," you have my name, and if you would like a run into the country, come and see me, and I shall be pleased to havo a chat with you, and may be able; to give you some useful information. I will show you round a good district whero as good butter can ho produced as in the much talked-ot Mnugoro or Papatoctoc districts.— l am, etc., Hevwood Cuispk. Stanlake, Mauku.
