THE BUTTER DISCUSSION.

TO THE EDITOR. Sik, —I have requested the London Dairy Company, of Victoria-street, Auckland, who nave purchased the whole of my buttei for the last four years, to forward you sample of this week's production. The whole of my last week's supply was in the hands of the consumer when the letter of " Grumbler" appeared in your columns, which will account for the apparent delay. I have had my initials, J. A. (conjoined), on my butter for the last four years, and have had many consultations about size and shape with the London Dairy Company, who, I may say, have been successful makers as well as vendors of butter in one of the beet dairy districts of England ; their invariable remark has been, "Do not attempt to improve on what you are now doing." If, however, "Grumbler" can suggest any simple and feasible way and definite advantage in putting the date of manufacture on my butter, 1 should be willing to adopt it. Although my fourth year's contract did not terminate till the end of this month, I received overtures from the London Dairy Company some months ago for a renewal, and have now entered into a contract with them for the next twelve months at considerably over the average current quoted rates. It is, perhaps, unnecessary to remind you that my butter took two firrab prizes and bhe champion prize at the show of the Auckland Agricultural and Pastoral Society againet very many competitors. —I am etc. John Allbn.

Hillside, Pukekohe. [The sample of butter referred to abort has come to hand, and ib ie found to be quite equal to the best turned out by the factory system. Butter of such quantj would, no doub*,gi?e "Grumbler" eatia faction.—Ed.]
