ADULTERATION OF COFFEE.

Sir,—We have had milk and tea prosecutions. When are the vendors of coffee, mixed with a large percentage of chicory and sold as pure coffse, to understand that such article should be sold for a fair price, and not as pure coffee, at from Is 6d to Seperlb? Well flavoured, pure, ground coffee seems almost unobtainable unless the bean is purchased, roasted and ground at home. It will be stated that some persons prefer chicory mixed with coffee. Granted that this is so. Then the public should payaccordingly, and the mixtures sold should be marked, with the respective proportions of chicory and coffee—thns : half lb. o£ coffee at 20d, 10d ; half lb. of chicory at 6d, 3d : Is Id. The public wonld then know what they are buying and what they are paying for. At present they pay the price of coffee for chicory, with about one-half olless of the former article.—l am, &c, Fiat Lux.
