DELICIOUS ICE CREAM
EVERYBODY’S FAVOURITE. During the past month an up-to-date factory built strictly to. the requirements of the Health Department, for the manufacture of ice cream on a wholesale basis has been erected, at the Whangarei Dairy Company, The movement was initiated by Mr W. Nicholson, well known locally as a confectioner, and he has enlisted the services of Mr A, Leatherby for manufacturing the product, which will be sold direct to retailers .throughout the district in quantities ranging from a half-gallon upwards. The merits of Mr Leatherby as a manufacturer of ice cream of super excellence are well known and the product has certainly been a favourite in the past with both children and adults. This season the conditions under which this delicacy is manufactured make for a higher quality article than in the past. The factory is. equipped with every modern facility, the conditions are ideal and there is available an unlimited supply of ice. The manufacturing room which is used exclusively for that purpose is in itself an example of cleanliness, the walls being snow-white, the floor concrete, and there is ample ventilation. In addition there are two separate compartments, one being used as a store-room and the other as a washing up room, which is fitted with a hot and cold-water service. A daily supply of pure fresh milk and cream is being forwarded to the factory and prior to being manufactured into ice cream is scalded by a steam process, the object being to eliminate the presence of bacteria and further enhance the quality of the product. Such a jn-ooess also ensures uniformity in texture and flavour and adds to the keeping qualities. Every ounce of Nicholson ’s ice cream is backed by the reputation of being the acme of perfection, cooling, invigorating, and health-giv-ing.
