SCTENTEST’S REVELATION,

(Special to “Northern Advocate.”) HAWERA, This Day.

The value of research work in the Tlawcra Laboratory, by R.- 0. Yeale, dairy scientist, has been revealed in a remarkable manner.

In the course of a report to the Federation of Taranaki Dairy Compianios, Mr Veale stated that by the courtesy of the Riverdale and Nor-1 manby Companies press drainings, j under sanitary conditions, taken overj two days in February last, were col-j lected and separated. The cream was j taken to the Normanby factory and mixed with an equal volume of skim! milk and again separated. This pro- j cess had the- effect of removing a considerable measure of the saltinessof the product and also largely ab- i sorbed the chauacteristic- flavour of the cream. It was then neutralised, pasteurised, cooled and churned, and from one 25-gallon can of cream, over two boxes of butter were made.

The whole of this was sold locally without any difficulty at Is 2d per lb.

The Federation resolved that the Department of Agriculture be approached with a view to having the dairy regulations altered so as to allow butter to be made from cheese preps fat.
