Drive for Bigger Cheese Production
PROBLEMS CONFRONTING INDUSTRY Problems besetting the dairy industry in its endeavours to comply with the Government’s request for tho production of more cheese, in the place of butter, were discussed at a meeting yesterday of the executive of tho Alanawatu and West Coast Dairy Companies’ Association. Attention was drawn to the shortage of milk cans, vats, pressses and other equipment, while tho difficulty of securing additional skilled labour, a position already aggravated by the war, was stresssed. One member said his factory had a staff of live and to run a double shift, ns suggested by the Government, would require a total staff of 18. Another member said his company had appealed for its manager and first assistant, who had been called up in the ballot, and had been informed that they should get married men. To make the fullest use of the equipment available, it was probable that twice-daily deliveries of milk and double shifts at the factories would be insisted on, also that factories which had idle vats would be required to hand them to factories which could make use of them, it was stated. The meeting decided to ask the Dairy Division to give nistructions in writing to Hairy factories concerning the qiiantities of cheese they were expected to make during the coming season, and to advise them what now equipment and additional labour would be available.
