GOOSEBERRY CHEESE Cover the bottom of a preserving pan with water; put in the gooseberries, which have been topped, tailed, and washed. Simmer until they are soft, then rub through a sieve.. Measure the pulp, and to each pint add a pound of warm preserving sugar. Stir until the sugar melts, then boil quickly until the cheese thickens.
