FIG AND RICE FRITTERS, Half a pound of dried figs, two dunces of sugar, the. juice of one loinou, two cups of rice, one egg, some breadcrumbs, butter for, frying. SteV the figs gently in a Tittle water, with two ounces of sugar. Put them into,a basin, then add. the lemon juice and a cupful of the fruit water. Partly boil the rice, add it to the.fig mixture aud mix well together. Boil the mixture until the rice is tender aud thickens, then lot it cool and form it- into balls. Roll in the mixed bcatcii egg and breadcrumbs and fry in hot fat t. ; ll golden brown.
