Quick Way to Wash Spinnach

The quickest and best way of washing spinach is to put it in cold watci with two or three tablespoonsful of salt, and leave it for 20. minutes. Then pour the water off and the sand will be found to have gone to tho bottom. Cover the spinach with hot water ,which improves the flavour, and hold each spray under the cold water faucet as the stems are cut off and drop the leaves into the pot it is to be cooked in, and do not add any more water, but sprinkle with salt, and let it cook in the water on the leaves.
