TO-DAY'S RECIPE
MARROW AND ORANGE PRESERVE.
Six lb. of marrow, 61b. of sugar, one quart of water, four oranges, two lemons, 2oz. of root ginger. Peel the marrow, remove the seeds and cut the vegetable into disc. Weigh these and put them into a pan. with the sugar and water and bring to the boil. Simmer for 2D minutes, skim, then strain off the liquid, put the marrow into a basin and return the liquid to the pan. Bruise the ginger and tie it in muslin. Grate off the orange and lemon rinds, or peel off the yellow portion very thinly and cut it into line shreds. Add these, with the ginger and the strained juice of Ihe oranges and lemons, to the liquid, and boil for 30 minutes; skim, return the pieces of marrow to the pan and boil again for another 30 minutes or until the marrow looks clear. Remove all scum and the ginger. Put the preserve into pots and cover.
