KEDGEREE CROUTONS. Cook a good-sized piece of smoked fish, remove skin and •bones and flake it with, a fork. Heat in a saucepan 2oz. butter and quarter pint of thick cream or white sauce, then add the Ash, a breakfastcupful of wellboiled patna rice, two roughlychopped, hard-boiled eggs, and season with salt, black pepper, and a dusting of curry powder. Stir until it is thoroughly hot, and serve in neat little mounds on some slices of fried bread which have been spread with a thin layer of tomato ketchup.
