STAINLESS KNIVES
HOW IO KEEP THE KEEN EDGE. When you experience difficulty in keeping stainless knives sharp, remember one or all of the following simple hints. Never put stainless cutlery into hot fat which affects the proper temper of the steel so that it blunts easily. For the same reason, when washing stainloss knives be careful not to'expose for more than a second or two to boiling water. Nothing will take the edge off a stainless knife sooner than exposure to strong sunlight for long periods. Stainless steel in much more sensitive than ordinary steel, and is peculiarly affected-by heat as well as by cold. . Stainless knives sometimes fail to keep their edge owing to prolonged use without a break. The metal is ‘tired’ and the best thing to do is to put the set aside for a week or two, storing it in some dark place. Another method that soerns popular with many housewives is to halve the sot of stainless knives, and use them on alternate days. Tho knives do not get out of condition, and you can count on the keen edge bping preserved without much trouble.
