Shortbread Fingers. One pound of flour-, ilb of white sugar (or less according to taste), Mb of butter, 2 tablespoons of, water. Rub the butter and sugar well together, mix the water, and shake in the flour gradually. Rub all together, roll out on a board, and cut into fingers. Bake in a quick oven till a light brown on both sides, having turned them over once. Banana Chocolate Cream. Peel and slice two or three nicesized bananas, and place in a dish. Then make a pint of boiled custard, to which has boon added a good tablospoonful of powdered chocolate (or cocoa), a few drops of vanilla, and a piece of butter, about the size of a walnut. Pour this (while hot) over the bananas, and sprinkle the top with a little desiccated coconut. Serve when cold. This makes a most delicious, nourishing, and economical dish. Demon Meringue Tart,

Place in a saucepan a cup of water and a cup of sugar, bring to boil and pour on to five tablespoons of cornflour moistened with a little water. Boil the mixture for four minutes, then add ono teaspoon of grated lemon rind and cook for a further two minutes. Pour the mixture while hot on to the beaten yolks of three eggs, a tablespoon of butter ,and the juice of one lemon. Bine a pieplato with pastry, and pour in. Bake in a moderate oven for half an hour. Beat up the whites of the eggs to a stiff froth with three tablespoons of sugar, and when the tart is done place the meringue on top in spoonfuls. fS'ut back in the oven to brown. Macaroni Cheese. Half pound of smaJl pipe macaroni, Jib of butter, Goz. of grated cheese, 1 pint of milk, and 2 pints of water. When the milk and water boil, drop in macaroni, boil slowly until tender, then place a layer of macaroni in a dish, then cheese, mustard (made), butter, pepper and salt alternately, having cheese for top row. Bake 21 minutes in a quick oven. Serve very hot. Raisin Pudding Without Eggs. Mis together lib of flour, Jib of breadcrumbs. Jib of chopped suet, 11b of quartered raisins, one teaspoonful of ginger, a small halfteaspoonful of salt, and a good flavouring of "nutmeg. Stir two tablespoonsful of treacle into a pint of milk, and mix with the dry ingredients. To make a lighter pudding add a half-teaspoonful of bicarbonate of soda and use sour milk. Steam for not less than two hours. Beef Rolls. The remains of cold roast or boiled beef, seasoning to taste of salt, popper and minced herbs; puffpaste. Mince the beef tolerably fine with a small amount of its own fat; add a seasoning of pepper, salt and chopped herbs; put the meat into a roll of puff-paste, and bake for half an hour, or rather longer, should the roll be very large. Beef patties may be made of cold meat, by mincing and seasoning beef, as directed above, and baking in a rich puff-paste, in patty-tins.
