HOT SCONES. These can be mixed and baked in half an hour. Dry thoroughly and sift into a bowl eight ounces of plain flour, four level teaspoonfuls of baking powder, and a quarter of a teaspoonful of salt. Lightly rub in two ounces of butter, and add enough milk to make a soft dough. Roll out quickly and lightly about an inch thick, cut into small rounds, and bake in a hot oven for twelve to fifteen minutes. As soon as cooked, slit open one side, put a lump of butter inside, and serve at once filled on a napkin or in a muffin dish.
