A RECIPE.
; DROP SCONES. Drop scones .are easy to make, and somehow much more interesting than ordinary scones. To a pound of flour allow an egg, a pinch of salt, a teaspoonful of cream of tartar and one of bicarbonate of soda, and a little sour milk, just enough to mix. Smooth the soda and cream of tartar , away in a little flour, thon mix with the rest of the flour and sieve all the dry ingredients together. Mix with the eggs and sour milk to a thick batter — about the consistency of Yorkshire pudding. Meanwhile heat a frying pan and melt a little butter or lard in it, ana drop tablespoonfuls of the batter in, leaving a good space between each. Turn so that both sides will be cooked a golden brown, and serve with plenty , of butter.
