HOLIDAY BAKING.
CATERERS’ DIFFICULTIES. WANGANUI, Feb. 11. When a remit was being discussed at the New Zealand Master Bakers’ and Pastrycooks’ Association’s annual conference at Wanganui to-day the existing award in regard to holiday baking was subjected to criticism, and apart from criticism of instances where breaches had occurred a sidelight to the main issue drew some interesting comment.
After the Auckland association’s remit had been moved, Air A. F. Dustin (Wellington) pointed out that on holidays catering firms had to bake to enable them to carry out tlieir holiday contracts, and it was impossible for them to observe these holidays. ' He added that at certain times in the holiday season people had to eat bread four days old.
An Auckland delegate remarked that Auckland was the only place in the Dominion where the public at race meetings had to eat four-day-old bread. Mr J. 0. Boniface (Palmerston North) said lie had every sympathy with tlie caterers, who had now to meet altered competition. The profits in entering, at race meetings more especially, had decreased, ns people were taking their own lunches and afternoon teas. Caterers, he considered, should be allowed to give tlieir customers the very best.
Mr S. S. Green (Auckland) said that awards would be sought, soon throughout New Zealand.
