N.Z. CHEESE AND BUTTER.
As considerable atcention is bsing paid by farmers to the subject of the export of butter and cheese to the English market, the following extracts from a circular received by ua from Messrs Cruickshank and Lovell, dairy produce salesmen, London, should prove of general interest. They say, inter alia: —
We are now doing a considerable business in N.Z. aud Australian cheese and butter, and we think if shippers would give the attention necessary to these articles a large and profitable wou'.d result. Only fines' butter, shipped in refrig-rators and in good con iit ion when put on baari, can piy ihe seulera, as any bu ter outside refrigerators arrives in this country in such condition that it. is quite unfit for table use and can only b? sol'! a* grease butter. This applies to bath clieese anti butter. We are sal isfie I there is a big lulure for N.Z oheesus, and they wi:l yet ge : a preference to the bu k of the American cheeses that are sold oo this mark-it, as their keeping qiulities are more on a par with Ounidian and our own Cliedd <r cheese. W.< think it would be fir more advantageous 10 senders and buyers if cheo*e wore shipped not so matured, as they ripen quickly on the voyage, ani in onsequence show flivor.
