Cheshire Cheese.
» As regards cheese, the "Grocer " says thait for -English makes the demand has proved equal to the supply, and no sudden variations in prices have taken place. Common and fine qualities have preserved their old distinctions, all inferior cheese being of slower sale than the finer and more selected sorts, and realising only very low rates , in comparison ,with the: extreme 1 questions that have been ruling for anything superlatively choice. What an inducement this fact should be to the cheese -making dairy farmers of Lancashire and Cheshire to produce cheese of the finest sort. Last year as much as. from 70s to 80s and 88s was paid for fancy lots of Cheshire and Cheddar makes. At the autumn fftirs,' when there was a prospect of a drought of long duration, as much as from 100 a to 135s were the prices paid for the finest specimens of perfect cheese, whilst in the London markets the outside price for Cheshire ran up to 90s. The " Grocer " reports that this preference has been shown np to the present period, and will always be given by those in the trade who must have the best that can be produced, and none other. The above is well worth taking to heart by all colonists. London must have the best that can be produced, and it is only wasting money to send anything else.
