Ingredients: One and a-half lbs. of Hour, lib. butter, lib. brown sugar, 141 b. mixed peel, currants, %lb. raisins, %lb. sultanas, almonds, the g rated rind of one lemon, 1 teaspoon mixed spice, ten eggs, 2 tablespoons golden syrup, 1 wineglass of spirits (brandy or cider). If baked in one tin allow 4 to 6 hours for cooking, and 3 hours if baked in two tins. Method: Beat the butter and augar

to a cream, add eggs one at a time

After four eggs have been added it is advisable to add one tablespoon of the flour to prevent the mixture curdling. Add the syrup, warmed, then fruit which has been previously cleaned and cut and mixed with the flour and spices, then spirits. Put in a greased tin and bake in hot oven for the first half hour and then gradually lower the temperature to moderate for next hour and then lower till cake is readv.
