PRICE OF MEAT.

- Sif, — The most popular topic just now seems to~~be the price of butcher's meat, and I see' the 'councillors have caught, the fever, ft is very amusing to read the various criticisms from tnoso who seem to know very Htlle- about it. Li) scanning "Over- the revised price-list I find the butchers have at last realised the fact that -the" value 'of an aiticle is based upon the supply and demand, and in a town like Hawera. "which as assuming such a high state of -civilisation, everybody seems to want the one article, viz., rump steak and "sirloin, and a, very little- piece at a time, "but lie -sure and call to-morrow in case I might want another pound of rump steak." This makes the cost of distribution a "very serious item. I find I can get my good old fore-quarter family joint still at 4d per lb. the same as I used to; but^ remember I go to the shop about twice a" week,, and. if more people followed my i example the public of Hawera could have their meat quite a penny per lb cheaper. With regard to botels and boarding-houses the- butchers" have been rather too good, for they are, giving them meat at cash prices less 10 per cent, discount, meaning fully a halfpenny per Vo less than we pay and a month credit thrown in; or,, in other words, soiling their sausages at 3£d per ~lb — cheaper ,than ever I have sen them many part of Xew Zealand. — I am, etc., 1 • CONSUMER.
