JERSEY WONDERS. Ingredients; 11b. flour, 3oz. butter, 3oz. white sugar, flavourings of nutmeg, ginger, grated lemon peel, 4 eggs. Method: Mix the flour, butter, sugar and flavourings. Beat the eggs, mix them with the other ingredients and knead well. Form the dough into a wrist-thick roll. Out it into circular slices. In each slice make two knife slits, and pass the left edge through the right-hand slit. Cook the wonders, three or four at a time, in a pan of deep, boiling fat. Turn with a fork, allowing 6 minutes on each side. Turn out onto a wire sieve and allow to cool.
