QUEEN PUDDING. Ingredients: 3 eggs, 2 small cups bread crumbs, 1 pint boiling milk, loz. butter, grated rind of one lemon, 1 tablespoonful sugar, apricot jam. Method: Put the sugar and butter in the hot milk and pour this over the bread crumbs. Beat one whole egg and two yolks and add to the mixture. Put all in a buttered pie-dish and bake until set, but not brown. Then cover with a layer of apricot jam and meringue made from the other two whites of egg and sugar. Return to the oven and bake slowly until the meringue has set.
