SPECIAL “TRIBUNE” RECIPES
FILL THE TINS FOR THE HOLIDAYS. PLAIN FRUIT CAKE. 2 eggs, cup butter or dripping, 3 cups of flour, about 1 cup milk, 1 cup brown ’sugar, J cup treacle, 1 cup raisins, 1 cup mixed fruit, 2 teaspoons linking powder. Method: Beat the sugar and fat, add the two eggs and beat again. Then the rest of the ingredients. Bake for ij hours in a good oven. CHEESE BUSTERS. Sift in 1 small teaspoon of salt and teaspoon of cayenne pepper with 2 heaped cups of flour. Rub in finely 3ozs. butter and add a small cup oi grated cheese. Mix to a firm dough with milk and water Roll out as thin as paper if possible. Cut into squares and prick with a fork. Cook in a good oven till crisp and brown. Keep in an airtight tin. GINGER BISCUITS. 1-lb. butter, Jib. sugar, Jib. golden syrup. To weigh these, first weigh the sugar and then put on the lib. weight to weigh the syrup on top of the sugar. Weigh butter next Melt these ingredients in a saucepan. Add to 1-lb. flour 1 heaped teaspoon of ground ginger and I teaspoon of bicarbonate of soda. Sift these into the mixture in the saucepan and mix all well together. Then have a cold oven slide and put on small teaspoon of the mixture. Pat each one down with the fingers to make it thin. Bake till brown in a slowish oven. When you take out the slide, leave for one or two minutes before sliding off the biscuits with a knife—so that they are not quite so soft.
