USEFUL RECIPES
VEAL PIE. The knuckle of the leg or shoulder makes a good pie. Cut off all the meat neatly in small pieces. Stew the bones and skin for an hour with a teaspoon of salt in the water. Let it stand to cool and remove the fat. Arrange the meat in the pie dish with a good seasoning of pepper, salt, and mace between each layer. Put I pint of cold water into the dish and cover with a good pie crust. Make an opening in the middle of the crust. When the pie is baked, heat and thicken the gravy made from the stewed bones and skin, and pour it in through a funnel. The pie needs Jong and careful baking so that tho meat inside is well cooked. FELIXTOWN TART. One heaped tablespoon cornflour, 2 heaped tablespoons of flour, 1 teaspoon baking powder, a pinch of salt, butter the size of a duck egg, 1 egg, 1 tablespoon of sugar. Separate the white from the yolk of egg. cream the butter and sugar, add tne Hour, corn Hour, baking powder, and the yolk of egg. Put m a large dish and cook. Take out when browned. Spread with stewed apples. Then decorate with the white of egg stiffly beaten and mixed with two tablespoons of sugar to make meringue. Put back in the oven to crisp the meringue. NUTTY FINGERS. Cream Jib. butter, |lb. sugar, add 1 beaten egg, also 1 large cup of Hour, J small teaspoon of baking powder, 1 cup of chopped walnuts, 1 cup of chopped dates. Do not grease the tm, but spread out the mixture ‘to about nine inches square. Cut while hot into fingers and leave until cold before lifting off with the knife. Bake in a moderate oven. BILLY BREAD. One cup Hour, 1 cup wheatmeal, 2 teaspoons baking .powder, I teaspoon salt, 1 tablespoon Golden Syrup, J cup of milk, a few chopped dates. Warm the milk with the Golden Syrup. Mix all together. Bake for 1 hour in a tin with the lid on, and cut next day. GREEN TOMATO JAM. (By Request.) Through the interruption of influenza this promised recipe has been delayed, but as there are still plenty of green tomatoes on the bushes maybe it is not too late. 41bs. green tomatoes. 2 finely-sliced lemons. Jibs, sugar. Cut the tomatoes in smallish pieces (quarters if the tomatoes are small). Put the sugar in the preserving pan with just enough water to melt it. Add the thinly-sliced lemon and cook these for a little time till tender. Then add the tomatoes and cook these till they arc transparent and quite soft. Half a pound of chopped preserved ginger may be added if liked.
